Method
Preheat the oven to 350°F (350°F) and grease a 9×5‑inch loaf pan or line it with parchment paper.
In a small bowl, dissolve the instant coffee in 3 tbsp hot water; set aside to cool slightly.
Kitchen notes · Added by ReelsMeals: The coffee granules dissolve into the hot water. Let the mixture cool slightly before adding it to the batter.
In a large mixing bowl, mash the bananas until smooth.
Kitchen notes · Added by ReelsMeals: The bananas form a smooth mash. Mash thoroughly to avoid large lumps in the loaf.
Add the peanut butter to the mashed bananas and stir until fully incorporated.
Stir in the dissolved coffee mixture, mixing evenly.
Add the eggs one at a time, beating well after each addition.
Kitchen notes · Added by ReelsMeals: The eggs are fully incorporated and the batter looks even. Beat well after each egg as directed.
Sprinkle the baking powder over the batter and fold it in gently.
Kitchen notes · Added by ReelsMeals: The baking powder is distributed through the batter without overmixing. Fold gently until no dry patches remain.
If using chocolate chips, fold half of them into the batter.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Scatter the remaining chocolate chips over the surface, if desired.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Kitchen notes · Added by ReelsMeals: The center passes the toothpick check. Check the center before removing the loaf from the oven.
Remove the loaf from the oven and let it rest in the pan for about 10 minutes.
Transfer the loaf to a wire rack to cool completely before slicing and serving.
Kitchen notes · Added by ReelsMeals: The loaf is cool enough to slice cleanly. Let it cool fully on the rack before slicing.
