Why 20% and not half

The air fryer's advantage is surface heat transfer, not raw power. It browns and crisps the outside much faster, but the middle of a chicken breast still has to reach temperature by conduction at its own pace. That is why the time saving is meaningful but modest, and why a thermometer beats a timer for anything thick.
