Decadent Eggless Matilda Chocolate Cake

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Prepare two 9-inch (23cm) round cake pans by greasing them and lining the bottoms with parchment paper.
  3. In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  4. In a large bowl, whisk together milk, oil, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, whisking until smooth.
  6. Melt the chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  7. Allow the melted chocolate to cool slightly, then fold it into the cake batter until well combined.
  8. Divide the batter evenly between the prepared pans and smooth the tops.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  11. Once the cakes are completely cool, you can frost and decorate them as desired.
