Method
Sundae Cupcake
Drain the liquid from the maraschino cherries, then place the cherries in a bowl.
Pipe a small blob of chocolate frosting onto each chocolate cupcake, sprinkle with sprinkles, and top with a cherry.
Oreo Cupcake
Separate 24 Oreo cookies for topping and 16 for the frosting; crush the 16 into fine crumbs.
Mix the Oreo crumbs into vanilla frosting to create a cookies‑and‑cream frosting, then pipe a swirl onto each chocolate cupcake.
Press the remaining 24 Oreo cookies onto the frosting as a topping.
Twix‑Caramel Cupcake: In a saucepan, combine caster sugar and water; heat over medium until the sugar dissolves and the mixture begins to bubble.
Twix‑Caramel Cupcake: Add butter, then stir until melted and the mixture turns a caramel colour.
Twix‑Caramel Cupcake: Stir in heavy double cream and vanilla extract; continue heating until the sauce thickens, then remove from heat.
Twix‑Caramel Cupcake: Core each lemon cupcake and fill the holes with the caramel sauce; let cool slightly.
Twix‑Caramel Cupcake: Chop the Twix bars into small pieces and fold some into vanilla frosting, reserving a few pieces for garnish.
Twix‑Caramel Cupcake: Pipe the Twix‑studded frosting onto the filled cupcakes, drizzle with extra caramel sauce, and top with the remaining Twix pieces.
