Simple Simmered Kaboja Squash

Recipe by J. Kenji López-Alt on YouTubeAdded 7 November 2026.
  • 30 min
  • Serves 3
  • 12 ingredients

15 minutes to prep, 15 to cook. A comforting Japanese-style simmered kabocha squash cooked in a fragrant soy‑dashi broth. The sweet mirin and sake balance the savory soy sauce, while the tender skin‑on squash makes for a quick, hearty side dish that can be easily turned into a complete meal with added protein or garnish.

Method

  1. 1

Prepare a simple dashi by simmering kombu and katsuobushi in water, then strain the liquid.

  2. 2

Add mirin, sake, a little sugar, and soy sauce to the strained dashi to create the broth.

  3. 3

Place the kabocha squash chunks directly into the flavored dashi in a wok.

  4. 4

Bring the mixture to a gentle simmer, covering the wok loosely (or using a makeshift cartouche) to keep the squash submerged while allowing steam to escape.

  5. 5

Simmer for about 10–15 minutes, checking for tenderness by piercing with a chopstick; the squash should be soft but the skin should remain intact.

  6. 6

If the skin begins to split, remove the wok from heat a few minutes earlier.

  7. 7

Transfer the cooked squash to a serving bowl, optionally mashing slightly for a softer texture.

  8. 8

Garnish with chopped scallions, sesame seeds, dried bonito flakes, and/or add shredded chicken or tofu if desired.

  9. 9

Serve the broth alongside the squash; the remaining liquid can be used as a dipping sauce or base for noodles.

Tips while you cook

Cover loosely while simmering
Keep the wok loosely covered (or use a makeshift cartouche).
Check tenderness early
After 10–15 minutes, pierce the squash with a chopstick; if the skin begins to split, remove the wok from heat a few minutes sooner.
Strain dashi before seasoning
Strain the kombu and katsuobushi broth before adding mirin, sake, sugar, and soy sauce.
