Method
Cook washed sushi rice in 290 ml water. Stir in rice vinegar, sugar and salt, then press firmly into a cling‑wrapped tray, cover and weigh down with a second tray; freeze for 1 hour.
Cut the rice into squares and shallow‑fry in hot neutral oil until golden on all sides; season with salt.
Mix shredded poached chicken with Kewpie mayo, Dijon mustard, yuzu juice, diced celery, diced shallot, diced green apple, light soy sauce, white pepper and salt to taste.
Thinly slice sugar snap peas diagonally, toss with rice vinegar, sugar and a pinch of salt, and set aside to pickle.
Combine furikake, chilli flakes and sugar; pour over hot oil, then stir in soy sauce and sesame oil to create the chilli oil.
Blend blanched edamame with avocado, white miso, lime juice, sesame oil, neutral oil, ice cubes, and salt & pepper until smooth and fluffy; transfer to a piping bag and refrigerate.
Pipe the whipped edamame onto each piece of crispy rice, top with yuzu chicken, add pickled peas and drizzle with furikake chilli oil.
