Method
Preheat the oven to 375°F (375°F).
Line a baking sheet with foil and lightly spray it with coconut‑oil spray.
Spread the diced sweet potatoes on the sheet, drizzle with a little oil spray, and toss to coat evenly.
Season the sweet potatoes with garlic powder and a pinch of salt.
Arrange the bacon pieces on top of the sweet potatoes, covering as much surface as possible.
Bake for 25–30 minutes, until the bacon is crispy and the sweet potatoes are fork‑tender.
While the pan bakes, combine the diced cherry tomatoes, diced white onion, minced garlic, chopped cilantro, lime juice, olive oil, and a pinch of salt in a bowl; stir gently to make a fresh tomato salsa.
Increase the oven temperature to 400°F (400°F).
Create six wells in the sweet‑potato‑bacon mixture and crack an egg into each well.
Return the sheet pan to the oven and bake for 6–8 minutes, until the egg whites are set but the yolks remain runny.
Remove from the oven and top with the tomato salsa, sliced jalapeño, a grind of black pepper, chopped green onions, and additional cilantro.
Serve immediately while hot.
