Peach Bruschetta
This sweet and savory Peach Bruschetta is the perfect summer appetizer, featuring fresh peaches, creamy ricotta cheese, and a drizzle of balsamic glaze on toasted baguette slices.

Ingredients
- 1 loaf baguette
- 3 tbsp olive oil
- 2 cloves garlic
- 4 peaches
- 1 cup basil
- 1 tbsp honey
- 0.5 lemon
- 1 cup ricotta cheese
- 1 tbsp balsamic glaze
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with foil and arrange the thinly sliced baguette pieces in a single layer.
- Drizzle the baguette slices with 3 tablespoons of olive oil and toss to coat evenly.
- Bake the baguette slices in the preheated oven for 12-15 minutes, flipping them halfway through, until both sides are golden brown and crispy.
- While the crostini is still warm, peel 2 cloves of garlic and rub them gently into each crostini.
- Set the crostini aside to cool.
- In a food processor or high-speed blender, blend 1 cup of ricotta cheese for about 1 minute until smooth.
- In a bowl, combine 4 finely diced peaches, 1 cup of chiffonade-cut basil, 1 tablespoon of honey, and 0.5 lemon juiced. Mix well until all the ingredients are fully incorporated.
- To assemble the bruschetta, top each crostini with a dollop of whipped ricotta cheese, a spoonful of the peach mixture, and a drizzle of balsamic glaze.
- Serve immediately and enjoy!
