Peach Bruschetta

Ingredients

  • 1 loaf baguette
  • 3 tbsp olive oil
  • 2 cloves garlic
  • 4 peaches
  • 1 cup basil
  • 1 tbsp honey
  • 0.5 lemon
  • 1 cup ricotta cheese
  • 1 tbsp balsamic glaze

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with foil and arrange the thinly sliced baguette pieces in a single layer.
  3. Drizzle the baguette slices with 3 tablespoons of olive oil and toss to coat evenly.
  4. Bake the baguette slices in the preheated oven for 12-15 minutes, flipping them halfway through, until both sides are golden brown and crispy.
  5. While the crostini is still warm, peel 2 cloves of garlic and rub them gently into each crostini.
  6. Set the crostini aside to cool.
  7. In a food processor or high-speed blender, blend 1 cup of ricotta cheese for about 1 minute until smooth.
  8. In a bowl, combine 4 finely diced peaches, 1 cup of chiffonade-cut basil, 1 tablespoon of honey, and 0.5 lemon juiced. Mix well until all the ingredients are fully incorporated.
  9. To assemble the bruschetta, top each crostini with a dollop of whipped ricotta cheese, a spoonful of the peach mixture, and a drizzle of balsamic glaze.
  10. Serve immediately and enjoy!
