  1. 2

Prepare the bruschetta tomato mixture by combining diced vine tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, and salt and pepper to taste; refrigerate.

  2. 3

Blend the ricotta, minced garlic, olive oil, and salt and pepper to taste until smooth, then fold in chopped parsley; refrigerate.

  3. 4

Pat the steaks dry, coat with olive oil, and season generously on all sides with salt, pepper, and garlic (SPG rub).

  4. 5

Drizzle the baguette slices with olive oil.

  5. 6

Sear the steaks over high heat for about 2–3 minutes per side until desired doneness (approximately 130°F); let rest 8–10 minutes.

  6. 7

Dip the bread in the steak drippings, then toast until golden brown.

  7. 8

Rub the toasted bread with a garlic clove, thinly slice the rested steaks, top each crostini with the bruschetta tomato mixture and a dollop of whipped ricotta, drizzle with balsamic glaze, and garnish with fresh parsley.

Tips while you cook

Rest the steak
Let the seared steaks rest 8–10 minutes before slicing for easier cutting.
Chill components
Refrigerate both the tomato bruschetta mixture and the whipped ricotta until assembly time.
Use steak drippings
Dip each toasted baguette slice in the steak drippings before topping.
