- 2Stir in the soy sauce, brown sugar, sesame oil, rice wine vinegar, grated ginger, minced garlic, and gochujang. Mix well and simmer for 3–5 minutes, allowing the sauce to become glossy and slightly sticky. Remove the pan from the heat.
- 3Preheat the oven to 356°F (350°F). Line a baking tray with parchment paper.
- 4If the tortillas feel stiff, lightly dip each one in a shallow bowl of water for a few seconds, then pat dry. Cut each tortilla in half to create six pieces.
- 5Spoon an even amount of the beef mixture onto the center of each tortilla half, sprinkle with grated mozzarella, and fold the tortilla over to form a triangle pocket.
