Ingredients
- 1 can cannellini beans
- 1 can chickpeas (garbanzo beans)
- 4 oz turkey pepperoni
- 7 oz deli ham
- 7 oz deli turkey
- 4 oz part-skim mozzarella
- 3/4 cup banana peppers
- 0.5 medium white sweet onion
- 6 tbsp light mayo
- 1/2 cup Wickles sandwich spread
- to taste red wine vinegar
- to taste dried oregano
- to taste salt
- to taste pepper
Instructions
- In a large bowl, combine the cannellini beans, chickpeas, turkey pepperoni, deli ham, deli turkey, part-skim mozzarella, banana peppers, and white sweet onion.
- In a separate bowl, whisk together the light mayo and Wickles sandwich spread until smooth.
- Add the red wine vinegar, dried oregano, salt, and pepper to the mayo mixture and whisk until well combined.
- Pour the dressing over the bean and meat mixture, and toss until everything is well coated.
- Taste and adjust the seasoning as needed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a good stir and adjust the seasoning if needed.
- Serve chilled, garnished with additional banana peppers or chopped fresh herbs if desired.
