Ingredients

  • 2 lb chicken breast
  • 1 tsp salt
  • 1 tsp pepper
  • 7 1/4 tbsp oil
  • 5 garlic
  • 1 tsp ginger
  • 2 cup broccoli
  • 1 red bell pepper
  • 1 cup carrots
  • 0.5 onion
  • 1 green onion
  • 1 tbsp sesame seeds
  • 4 cup rice
  • 1/2 cup soy sauce
  • 0.33 cup honey
  • 1 tbsp sriracha
  • 1 tbsp rice vinegar
  • 2 tbsp water
  • 2 tbsp cornstarch

Instructions

  1. Preheat your wok or large skillet over low heat.
  2. Prepare all the ingredients before starting to cook. Evenly coat the diced chicken breast with salt and pepper, and set aside.
  3. In a small bowl, whisk together soy sauce, honey, sriracha, rice vinegar, salt, and pepper. Set the sauce aside.
  4. Add 1/4 cup of oil to the preheated wok. Once the oil is hot, add the chicken breast and cook for 3-4 minutes, or until the chicken is browned. Remove the chicken from the wok and set aside.
  5. Remove any excess water from the wok.
  6. Add 3 tablespoons of oil to the wok, followed by the minced garlic and ginger. Cook for 1 minute, stirring constantly, until fragrant.
  7. Add the diced broccoli to the wok and cook for 1-2 minutes, or until it starts to soften.
  8. Add the julienned red bell pepper, matchstick carrots, and julienned onion to the wok. Cook for an additional 2-3 minutes, or until all the vegetables are fork-tender.
  9. Add the cooked chicken back into the wok, along with the prepared sauce.
  10. In a small bowl, whisk together the water and cornstarch until the cornstarch is dissolved. Add the cornstarch mixture to the wok and stir to combine.
  11. Cook for an additional 1-2 minutes, or until the sauce has thickened.
  12. Serve the stir-fry over cooked rice, garnished with diced green onions and sesame seeds.
