Ingredients

  • 1 cup cherries
  • 1/2 cup almonds
  • 2 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 eggs
  • 1 cup milk
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C) and position a rack in the center of the oven.
  2. Grease a 9x5-inch loaf pan with butter or cooking spray and set it aside.
  3. In a large mixing bowl, whisk together the flour, granulated sugar, and salt until well combined.
  4. In a separate bowl, whisk together the eggs, milk, and melted butter until smooth.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  6. Gently fold in the chopped cherries and sliced almonds.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  9. Remove the bread from the oven and let it cool in the pan for 10 minutes.
  10. Transfer the bread to a wire rack to cool completely.
