Cherry Almond Sweet Bread

Ingredients
- 1 cup cherries
- 1/2 cup almonds
- 2 cup all-purpose flour
- 1 cup granulated sugar
- 2 eggs
- 1 cup milk
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (180°C) and position a rack in the center of the oven.
- Grease a 9x5-inch loaf pan with butter or cooking spray and set it aside.
- In a large mixing bowl, whisk together the flour, granulated sugar, and salt until well combined.
- In a separate bowl, whisk together the eggs, milk, and melted butter until smooth.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the chopped cherries and sliced almonds.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.
- Remove the bread from the oven and let it cool in the pan for 10 minutes.
- Transfer the bread to a wire rack to cool completely.
