Method
Trim the stem ends off the okra pods.
Slice each okra pod lengthwise and then cut into thin strips.
Place the sliced okra in a bowl.
Blend garlic cloves, green chilies, and peeled ginger together until a coarse paste forms.
In a separate pink bowl, combine gram flour, self-raising flour, turmeric, ground coriander, ground cumin, chilli powder, fine sea salt, and garam masala.
Add a spoonful of clear honey to the dry mixture and stir to incorporate.
Add the sliced okra strips to the bowl with the dry mixture and toss by hand until the pieces are evenly coated with the batter.
Transfer the coated okra to the air‑fryer basket in a single layer.
Air‑fry at a high setting until the fries are golden and crispy, about 10‑12 minutes, shaking the basket halfway through.
Serve hot, optionally sprinkling a little extra fine sea salt.
Tips while you cook
- Even coating
- Toss the sliced okra with the dry batter by hand until all pieces are evenly coated.
- Shake for uniform crispness
- Shake the air‑fryer basket halfway through cooking.
- Single‑layer arrangement
- Place the coated okra in a single layer in the basket to promote even air‑flow and crisping.
