30 minutes to prep, 45 to cook. Zuccotto is a luscious Italian coffee‑flavored dessert that combines espresso, amaretto, and a creamy chocolate‑nut filling. The airy whipped cream and crunchy toasted nuts give it a delightful texture, while the ladyfinger crust adds a subtle sweetness.

Method

  1. 1

Line a 2‑liter spherical bowl with plastic wrap.

  2. 2

Preheat the oven to 350°F (top and bottom heat).

  3. 3

Mix the espresso with the amaretto.

  4. 4

One by one, dip each ladyfinger in the espresso mixture and line the inside of the bowl with them; you may omit the amaretto and use extra espresso if desired.

  5. 5

Roast the hazelnuts and almonds in the oven for 8 minutes, let cool, then coarsely chop them.

  6. 6

Finely chop the dark chocolate, set half aside, and melt the remaining half in a bain‑marie.

  7. 7

Whip the cream with the powdered sugar until stiff, then fold in the chopped nuts and the chopped chocolate.

  8. 8

Spoon half of the cream mixture into the bowl and smooth the sides, creating a hollow center.

  9. 9

Stir the melted chocolate into the remaining whipped cream and fill the hollow center, smoothing the surface.

  10. 10

Cover the top with the remaining espresso‑dipped ladyfingers, fold the plastic wrap over, and chill in the refrigerator until set (2‑3 days ahead is fine).

  11. 11

Before serving, unmold the zuccotto onto a platter, remove the wrap, dust with cocoa powder, and cut into wedges with a warm knife.

Tips while you cook

Dip ladyfingers individually
Dip each ladyfinger one by one in the espresso mixture before lining the bowl.
Allow full chilling time
Refrigerate the assembled zuccotto for 2–3 days before unmolding.
Warm the knife for clean cuts
Run a knife under hot water, dry it, and slice the set zuccotto for smooth wedges.
