Method

Cake

  1. 1

Butter the three 22 cm springform pans and line the bases with parchment paper.

  2. 2

In a mixer, beat butter, oil, vanilla extract and brown sugar for about 10 minutes until creamy.

  3. 3

Add the eggs one at a time, mixing well after each addition.

  4. 4

Sift flour, cocoa powder, baking powder and salt into a bowl; gradually fold the dry mixture into the batter, alternating with the red wine, mixing only until just combined.

  5. 5

Divide the batter evenly among the three pans and bake in a pre‑heated 350°F oven (top and bottom heat) for 30 minutes.

  6. 6

Let the cakes cool completely after baking.

Frosting

  1. 7

In a mixer, combine cream cheese, butter, cocoa powder, powdered sugar and vanilla extract until a light, airy cream forms.

Assembly

  1. 8

Stack the three cake layers with frosting between each layer, then spread frosting over the top and sides of the cake.

  2. 9

Chill the assembled cake in the refrigerator for a few hours until firm.

Decoration

  1. 10

Dip the grapes, figs or fresh berries in melted dark chocolate and arrange them on the cake as desired.
