15 minutes to prep, 10 to cook. Three bite‑size brioche pieces topped with smoked eel and distinct Asian flavor profiles: spicy Korean gochujang, umami‑rich Japanese miso‑wasabi, and tangy Indian sambal. Crispy on the outside and soft inside, they make a memorable snack for gatherings.

Method
Melt the unsalted butter and divide it into three equal portions (about 20 g each). Mix one portion with gochujang, another with white miso, and the third with sambal oelek to create three flavored butters.
For the sweet‑sour cucumber, combine the thin cucumber slices with rice vinegar, sugar, and salt; let them marinate for 10–15 minutes, then drain well.
Heat a skillet over medium‑low heat. Spread the Korean gochujang butter on one side of each brioche slice and toast until golden on both sides.
Spread the Japanese miso butter on another set of brioche slices and toast similarly until golden.
Spread the Indian sambal butter on the remaining brioche slices and toast similarly until golden.
Korean variant
top the toasted brioche with kimchi, a dot of kimchi mayo, smoked eel, sesame seeds, and sliced scallion.
Japanese variant
top the toasted brioche with the marinated cucumber slices, smoked eel, wasabi mayo, furikake, and optional salmon roe.
Indian variant
top the toasted brioche with the marinated cucumber, smoked eel, optional sambal badjak, fried onions, and sliced red chili. Serve immediately.
