Method

  1. 1

Season the hanger steak generously with salt and let it rest uncovered in the refrigerator overnight, or at least one hour, to dry the surface.

  2. 2

Heat a pan over medium‑high heat and sear the steak for about 2–3 minutes per side until a crust forms and the interior reaches medium doneness.

  3. 3

Transfer the steak to a cutting board, let it rest briefly, then slice it thinly against the grain.

  4. 4

In the same pan, add the garlic cloves and toast them until golden; transfer the toasted garlic to a bowl.

  5. 5

Whisk together lime juice, fish sauce, sugar, and the sliced Thai chilies to create the dressing.

  6. 6

Stir the toasted garlic and thinly sliced shallots into the dressing.

  7. 7

In a large salad bowl, combine the sliced steak, diced tomato, thinly sliced cucumber, cilantro, mint, and basil leaves.

  8. 8

Pour the dressing over the salad and toss gently to coat all ingredients evenly.

  9. 9

Sprinkle the toasted rice powder over the top for added nuttiness and crunch.

  10. 10

    Serve the salad immediately.
