Method
Gnocchi Cacio e Pepe: Toast black peppercorns in a dry pan, crush them, and set aside.
Sauté sliced shiitake and oyster mushrooms in butter with a drizzle of olive oil until golden, then add whole sage leaves and cook briefly.
Add cooked gnocchi to the pan with butter, the toasted pepper, and a splash of starchy pasta water; toss until the gnocchi are coated in a creamy pepper sauce.
Stir in grated Parmesan and pecorino until melted, fold in the mushroom‑sage mixture, and serve immediately.
Chicken Satay
Combine chicken pieces with Thai red curry paste, peanut butter, brown sugar, fish sauce, soy sauce, and the cream from coconut milk; marinate for at least 30 minutes.
Cook basmati rice in a rice cooker (1 cup rice to 2 cups water) with a pinch of salt; steam halved pak choi on top of the rice until tender.
Pan‑fry the marinated chicken in oil until browned and cooked through.
For the satay sauce, whisk together the remaining curry paste, peanut butter, fish sauce, brown sugar, soy sauce, tamarind paste (or lime zest), and the remaining coconut milk; simmer briefly and pour over the cooked chicken.
Garnish the chicken bowl with crushed peanuts, lime wedges, and extra pak choi.
Gambas Pil‑Pil Pasta: Heat olive oil in a pan, add halved tomatoes and cook until softened.
Add sliced garlic, sweet paprika, and chili flakes; stir briefly.
Add prawns and cook 2–3 minutes until pink.
Add uncooked linguine directly to the pan with a splash of pasta water; toss until the pasta finishes cooking and absorbs the garlicky‑spicy oil.
Finish with rocket leaves, chopped flat‑leaf parsley, a squeeze of lemon juice, and season with salt and black pepper; serve hot.
Cheat Instant Ramen
Soak dried shiitake mushrooms in hot water until rehydrated; reserve the soaking liquid.
Press tofu between paper towels, cube it, and air‑fry at 275°F for about 9 minutes until crisp.
Air‑fry the egg at the same temperature for 9 minutes to achieve a soft‑boiled texture.
Cook instant ramen noodles according to the package directions, discarding the flavor sachet.
In a bowl combine the cooked noodles, mushroom soaking liquid, soy sauce, and sesame oil; toss well.
Top with crispy tofu, the air‑fried egg, sliced green onions, and season with salt to taste.
