Method

  1. 1

Pat the ribeye steak dry, season both sides with salt, and set aside.

  2. 2

Thinly slice the shallots and fry them in a generous layer of oil over medium heat until golden brown; drain on paper towels.

  3. 3

Finely chop the parsley, shallot, and red pepper for the chimichurri, grate the garlic, and combine with the other chimichurri ingredients, adding extra virgin olive oil to taste.

  4. 4

Make the sauce by mixing crème fraîche, mayonnaise, coarse Dijon mustard, lemon juice, minced garlic, chopped chives, salt, and black pepper.

  5. 5

Slice the cucumber very thin and toss with vinegar, a pinch of sugar, a pinch of salt, and fresh dill.

  6. 6

Heat a pan over high heat with a splash of oil, pat the steak dry again, and sear both sides until the internal temperature reaches 113°F; optionally baste with butter, garlic, and herbs, then let rest briefly.

  7. 7

Toast the baguette, slice the rested steak thinly, and assemble the sandwich: spread a layer of the crème fraîche sauce on the bread, add cucumber slices, steak strips, chimichurri, fried shallots, and grated Parmigiano Reggiano.

  8. 8

Enjoy the steak sandwich while hot.
