Recipe by Your Modern Mage on InstagramAdded 8 November 2026.

20 minutes to prep, 30 to cook. These high‑protein parathas combine soy chunks and moong dal for a nutritious twist on the classic Indian flatbread. Aromatic spices and fresh coriander give each bite a savory, mildly spicy flavor, making them perfect for a wholesome breakfast or a satisfying snack.

Method

  1. 1

Pressure cook the soya chunks, soaked moong dal, and diced bottle gourd with salt and enough water until soft; this usually takes about 8‑10 minutes after the pressure builds.

  2. 2

Allow the cooked mixture to cool slightly, then blend it with a hand blender into a smooth paste and let it reach room temperature.

  3. 3

To the cooled paste add the chopped onion, whole wheat flour, chopped green chillies, chopped coriander, red chilli powder, coriander powder, and roasted cumin powder; knead everything together until you obtain a medium‑soft, non‑sticky dough.

  4. 4

Divide the dough into equal portions, roll each portion into a thin paratha, and cook on a pre‑heated skillet (tawa) over medium heat, brushing lightly with ghee on both sides, until golden brown spots appear.

  5. 5

Serve the hot parathas immediately with your favorite vegetable curry, dal, or curd.

Tips while you cook

Cool before blending
Allow the cooked mixture to cool slightly before using the hand blender.
Knead to non‑sticky consistency
Knead the dough until it is medium‑soft and non‑sticky for easy rolling.
Rest dough briefly
Let the kneaded dough rest a few minutes before dividing and rolling.
Brush with ghee for golden spots
Brush each side of the paratha lightly with ghee while cooking on the skillet.
