15 minutes to prep, 15 to cook. These croissant bread pudding ham cups combine flaky, day‑old croissant crumbs with a sweet‑savory custard, all baked inside crisp ham cups. They make a portable, make‑ahead breakfast that can be reheated for busy mornings.

Method

  1. 1

Grease a standard 12‑cup muffin pan with nonstick cooking spray.

  2. 2

Line each cup with a slice of deli ham, shaping the ham into a cup and leaving an opening in the center for the custard.

  3. 3

In a mixing bowl, whisk the eggs, then stir in the half‑and‑half, granulated sugar, raw sugar, vanilla extract, and a pinch of kosher salt; mix until fully combined.

  4. 4

Add the torn croissant pieces to the custard mixture and toss until the pieces are evenly coated; let the croissants soak for about 15 minutes.

  5. 5

Spoon the soaked croissant mixture into the ham cups, filling them nearly to the top.

  6. 6

Evenly sprinkle a little raw sugar over the tops of each cup.

  7. 7

Place the pan in a pre‑heated oven at 350°F (350°F) and bake for 15 minutes, or until the custard is set and the tops are lightly golden.

  8. 8

Remove from the oven and allow the cups to cool in the pan for a few minutes before gently lifting them out to serve.

Tips while you cook

Soak croissant pieces

Prepare ham cups before filling
Grease the muffin pan and shape each slice of deli ham into a cup before adding the custard mixture to prevent sticking.
Add raw sugar topping
