30 minutes to prep, 30 to cook. Sheer Khurma is a rich, creamy Eid dessert made with full‑fat milk, vermicelli, and an abundance of dry fruits such as almonds, pistachios, cashews, raisins, and dates. Aromatic cardamom and fragrant kewra water give it a festive flavor, while toasted nuts add delightful crunch. It can be enjoyed warm or chilled.

Method
Heat a pan and melt the desi ghee.
Add the cashews, pistachios, and almonds to the hot ghee and fry until lightly golden, then remove and set aside.
Add the dates, raisins, and chirongi (charoli) seeds to the same ghee and sauté briefly.
Add the sevayian (vermicelli) and fry until golden, then remove and set aside.
In a separate pot, bring the full‑fat milk to a boil, stirring constantly and scraping the sides.
Boil the milk on medium heat for 5–7 minutes, then add the fried vermicelli and all the fried dry fruits.
Stir well and continue cooking on low heat for 8–10 minutes until the mixture thickens, stirring to prevent sticking.
Add the sugar and mix until dissolved.
Stir in the kewra water and cardamom powder, mixing thoroughly.
Cook on medium heat for another 5–7 minutes until the pudding reaches a thick, creamy consistency.
Remove from heat and transfer to a serving bowl; serve hot or chilled as desired.
