Best Chocolate Chip Cookies

Recipe by Ben Chelin on InstagramAdded 5 November 2026.
  • 35 min
  • Serves 6
  • 14 ingredients

20 minutes to prep, 15 to cook. These bakery‑style chocolate chip cookies are thick, gooey, and made in a single bowl for ultimate simplicity. A blend of dark brown sugar, honey, and both semi‑sweet and milk chocolate provides a deep, caramel‑rich flavor and a satisfyingly chewy texture, perfect for festive treats or any indulgent moment.

Method

  1. 1

In a bowl, whisk the softened butter with the dark brown sugar and granulated sugar aggressively for about 3 minutes until light and creamed.

  2. 2

Add the egg, egg yolk, vanilla bean paste, and honey; whisk aggressively for another 3 minutes until smooth.

  3. 3

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cornstarch, and kosher salt; gradually fold this dry mixture into the wet ingredients until just combined, being careful not to overmix.

  4. 4

Fold in the semi-sweet chocolate chips and the chopped milk chocolate.

  5. 5

Cover the dough and chill for at least 2 hours in the refrigerator, or 45 minutes to 1 hour in the freezer.

  6. 6

Preheat the oven to 350°F (350°F). Scoop the dough into six massive balls and place them several inches apart on a lined baking sheet.

  7. 7

If the dough isn’t fully cold, shape each ball into a tall peak so it spreads into a thick cookie rather than flattening.

  8. 8

Bake for 15 minutes until the edges are crispy and the centers are gooey.

Tips while you cook

Chill dough thoroughly
Refrigerate the dough for at least 2 hours before shaping.
Space dough balls on the sheet
Place the six massive dough balls several inches apart on the lined baking sheet to prevent them from merging.
Shape cold dough into peaks
If the dough isn’t fully cold, shape each ball into a tall peak.
