30 minutes to prep, 3 hours to cook. A classic Thanksgiving roast turkey seasoned with aromatic herbs, onion, and apple for juicy, flavorful meat. The herby oil rub under the skin creates a golden‑brown crust, and the pan juices form a rich base for gravy.

Method

  1. 1

Preheat the oven to 325°F (325°F).

  2. 2

Rinse the turkey and pat it dry with paper towels.

  3. 3

Place the onions, celery, and carrots in a roasting pan and set the turkey on top, breast‑side up.

  4. 4

Season the bird by sprinkling salt and pepper all over the outside and inside the cavity.

  5. 5

Combine olive oil, chopped fresh herbs, salt, and pepper; rub the herby oil under the skin and over the surface of the turkey.

  6. 6

Stuff the cavity with half an onion and half an apple to add moisture.

  7. 7

Tie the turkey legs together with kitchen twine.

  8. 8

Pour the wine and chicken stock into the bottom of the roasting pan.

  9. 9

Roast for 3–4 hours, about 15 minutes per pound, until the internal temperature reaches 175–180°F (80–180°F).

  10. 10

Baste the turkey with pan juices every hour, if desired.

  11. 11

Remove the turkey from the oven and let it rest for 45 minutes before carving; reserve the pan juices for gravy.
