Dad Ribs

30 minutes to prep, 3 hours 40 minutes to cook. These nostalgic "Dad Ribs" combine a slow‑roasted, dry‑brined pork rib with a sticky, sweet‑spicy onion BBQ sauce. The low‑and‑slow oven cook makes the meat ultra‑tender, while a quick high‑heat grill finish adds caramelized char and glossy lacquer. Perfect for a backyard barbecue that feels both classic and upgraded.

Method
Ribs and Rub
Remove the membrane from the ribs and cut each slab in half.
Mix coarse kosher salt, ground black pepper, and garlic powder; rub the mixture generously over all rib pieces and refrigerate uncovered overnight (or at least 2 hours).
Preheat the oven to 275°F. Double‑wrap each rib portion in foil, place on a sheet pan, and roast for 3 to 3.5 hours until the meat pulls back from the bones but does not fall off.
Rest the foiled ribs for 20 minutes, keeping them tightly wrapped.
Signature Onion BBQ Sauce: Heat a drizzle of neutral oil in a small saucepan over medium heat.
Signature Onion BBQ Sauce: Add the grated white onion and minced garlic; sauté for about 5 minutes until softened.
Signature Onion BBQ Sauce: Stir in ketchup, molasses, Worcestershire sauce, hot sauce, apple cider vinegar, yellow mustard, chili powder, and cayenne pepper; bring to a simmer.
Signature Onion BBQ Sauce: Reduce heat to low and cook for 10 minutes, or until the sauce has thickened and reduced by roughly 20‑25%.
Grilling
Preheat a grill to high and oil the grates.
Place the rested ribs meat‑side down on the grill for about 1‑2 minutes to develop a light char.
Flip the ribs, slather generously with the prepared BBQ sauce, close the lid and grill for 2 minutes.
Flip again so the sauced side contacts the grate, grill another 2‑3 minutes, then repeat the saucing and grilling once more, for a total grill time of about 8 minutes.
Finishing
Remove ribs from the grill, let rest briefly, then slice between the bones and serve.
