10 minutes to prep, 5 to cook. A vibrant twist on the classic grilled cheese, this sandwich layers colored cheeses with matching herb and spice accents for a visual feast. The crispy buttery bread holds a melty rainbow of Swiss, mozzarella, and gruyère, making it perfect for a fun lunch or a playful dinner with kids.

Method

  1. 1

Separate the grated cheeses into separate bowls, one bowl for each color you plan to use.

  2. 2

Add a few drops of food coloring to each bowl and stir until the cheese reaches the desired hue; mix in the matching flavorings (basil into the green bowl, chopped sun‑dried tomatoes into the red bowl, garlic powder into the yellow bowl).

  3. 3

Butter both sides of each slice of bread; if using mayonnaise, spread it on one side of each slice and butter the other side.

  4. 4

Heat a non‑stick pan or cast‑iron skillet over medium heat and add a small amount of butter or oil.

  5. 5

Place a buttered slice of bread in the skillet, cooking until the underside is lightly golden, then flip the slice.

  6. 6

Quickly layer the colored cheeses on the bread in a rainbow pattern, then top with another buttered slice of bread, butter‑sides outward. For an open‑faced version, skip the top slice and finish in a preheated oven (350°F / 350°F) until the cheese melts.

  7. 7

Cook the sandwich until the cheese is fully melted and the bread is crisp, flipping once to brown the other side.

  8. 8

Remove the sandwich from heat, let it cool briefly, then cut across the rainbow layers for a dramatic presentation.

  9. 9

Serve immediately and enjoy the colorful, flavorful grilled cheese.
