Method

  1. 1

Preheat the oven to 350°F (350°F, gas mark 4).

  2. 2

In a bowl, combine the plain flour, softened unsalted butter, granulated sugar, demerara sugar, roughly chopped pistachio nuts and a pinch of salt; rub together with your fingers until the mixture resembles coarse breadcrumbs – this is the crumble topping.

  3. 3

Peel, core and chop the pears; place them in a large skillet with a splash of water and the white granulated sugar, then cook over medium heat for about 15 minutes until the fruit begins to release its juices.

  4. 4

Add the blackberries to the skillet and continue cooking for another 2–3 minutes until they soften, then remove the pan from the heat and let the fruit mixture cool slightly.

  5. 5

Transfer the fruit mixture to an oven‑proof dish (or individual ramekins) and spread the crumble topping evenly over the top.

  6. 6

Bake for 30–40 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.

  7. 7

Allow the crumble to rest for a few minutes before serving, optionally with a scoop of vanilla ice cream.

Rub topping to breadcrumb texture
