Pan-Seared Filet Mignon with Rich Mustard Sauce

Ingredients

  • 4 steaks filet mignon
  • 2 tbsp whole-grain mustard
  • 1 tbsp Dijon mustard
  • 1/2 cup heavy cream
  • to taste salt
  • to taste black pepper
  • 2 tbsp butter

Instructions

  1. Bring the filet mignon to room temperature to ensure even cooking.
  2. Season the filet mignon steaks generously with salt and black pepper on both sides.
  3. Heat a large skillet over medium-high heat and add 1 tablespoon of butter. Once melted, add the filet mignon steaks and sear for 2-3 minutes on each side, or until a nice brown crust forms.
  4. Remove the filet mignon from the skillet and set aside on a plate to rest.
  5. Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet. Once melted, add the whole-grain mustard and Dijon mustard. Whisk until smooth.
  6. Pour in the heavy cream, whisking continuously to avoid lumps. Bring the mixture to a simmer and let cook for about 5 minutes, or until the sauce has thickened slightly.
  7. Return the filet mignon to the skillet, spooning some of the mustard sauce over the top of each steak.
  8. Let the filet mignon cook for an additional 2-3 minutes, or until it reaches your desired level of doneness.
  9. Remove the filet mignon from the skillet and let rest for 5 minutes before slicing.
  10. Serve the sliced filet mignon with the rich mustard sauce spooned over the top.
  11. Garnish with fresh herbs, if desired.
