Pan-Seared Filet Mignon with Rich Mustard Sauce

Ingredients
- 4 steaks filet mignon
- 2 tbsp whole-grain mustard
- 1 tbsp Dijon mustard
- 1/2 cup heavy cream
- to taste salt
- to taste black pepper
- 2 tbsp butter
Instructions
- Bring the filet mignon to room temperature to ensure even cooking.
- Season the filet mignon steaks generously with salt and black pepper on both sides.
- Heat a large skillet over medium-high heat and add 1 tablespoon of butter. Once melted, add the filet mignon steaks and sear for 2-3 minutes on each side, or until a nice brown crust forms.
- Remove the filet mignon from the skillet and set aside on a plate to rest.
- Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet. Once melted, add the whole-grain mustard and Dijon mustard. Whisk until smooth.
- Pour in the heavy cream, whisking continuously to avoid lumps. Bring the mixture to a simmer and let cook for about 5 minutes, or until the sauce has thickened slightly.
- Return the filet mignon to the skillet, spooning some of the mustard sauce over the top of each steak.
- Let the filet mignon cook for an additional 2-3 minutes, or until it reaches your desired level of doneness.
- Remove the filet mignon from the skillet and let rest for 5 minutes before slicing.
- Serve the sliced filet mignon with the rich mustard sauce spooned over the top.
- Garnish with fresh herbs, if desired.
