Method

  1. 1

Preheat the oven to 350°F and lightly grease a muffin tin with oil spray.

  2. 2

Place the hash browns into each muffin cup and bake for 10–15 minutes, until they are softened but not yet crisp.

  3. 3

Remove the tin and press the softened hash browns down with the bottom of a spice jar to form a cup shape.

  4. 4

Return the tin to the oven and bake at 400°F for another 10–15 minutes, until the hash brown cups are golden and crispy.

  5. 5

While the cups bake, whisk the eggs, milk, salt, and pepper together in a jug until fully combined.

  6. 6

Remove the cups from the oven and place one slice of ham on top of each crispy hash brown cup.

  7. 7

Pour the egg mixture over the ham and hash browns, filling each cup.

  8. 8

Sprinkle the grated Parmesan cheese evenly over all cups.

  9. 9

Bake the assembled quiches for an additional 10–15 minutes at 350°F, until the egg custard is set.

  10. 10

Remove from the oven, let cool slightly while still hot, and garnish with the sliced chives before serving.

Tips while you cook

Shape the hash brown cups
After the first bake, press the softened hash browns with the bottom of a spice jar to form cup shapes before the second bake.
Combine egg mixture thoroughly
Whisk the eggs, milk, salt, and pepper together until fully combined before pouring over the ham and hash browns.
Grease the tin early
Lightly spray the muffin tin with oil before adding the hash browns to prevent sticking.
Watch the final bake
Bake the assembled quiches at 180 °C for 10–15 minutes until the egg custard is set.
