Lard and Cracklings (Old European Way)
- 2 hr 15 min
- Serves 4
- 6 ingredients
15 minutes to prep, 2 hours to cook. Render pork fat into clear, pure lard and golden‑brown cracklings using a low‑heat, slow‑rendering method. The resulting lard is versatile for spreading, frying, or baking, while the cracklings add a savory crunch and can be flavored with herbs for a tasty spread or skin salve.

Method
Place the cut pieces of pork fat in a pot (no oil or additional fat needed).
Heat the pot over medium heat (approximately setting 3 to 3.5 on a typical stove) until the fat begins to melt.
Stir frequently to prevent the fat from burning; if desired, add a small amount of water to reduce scorching.
After about 5–7 minutes of bubbling, lower the heat to the lowest setting and continue cooking.
Simmer gently for 1.5–2 hours, stirring occasionally, until the liquid lard is clear and the solid pieces turn golden‑brown cracklings.
When the cracklings are fully rendered and the lard is clear, turn off the heat and let the pot sit for about 15 minutes to cool slightly.
Strain the liquid lard through a fine‑mesh sieve or cheesecloth into a clean container, separating the cracklings from the clear fat.
Allow the lard to solidify; it will become white and firm. The cracklings can be used as a crunchy topping or snack.
Optional: Add herbs such as onion, green onion, tomato, or parsley to the hot lard in a double‑boiler for a flavored spread or salve.
