Method

  1. 1

Parboil the basmati rice in water seasoned with whole garam masala (cloves, cardamom pods, star anise) until about 70% cooked, then drain and set aside.

  2. 2

In a heavy‑bottomed pot, arrange the raw chicken pieces and coat them with garlic‑ginger paste, plain yoghurt, chilli powder, garam masala, coriander powder, black pepper, cumin seeds, turmeric, salt, sliced fried onion, lemon juice, and saffron milk.

  3. 3

Layer the partially cooked rice over the marinated chicken, drizzle melted ghee on top, and place additional fried onion slices on the surface.

  4. 4

Cover the pot tightly, seal the lid with a clean kitchen cloth, and cook on low heat (dum) for about 10 minutes after turning off the heat, allowing the residual steam to finish cooking the biryani.

  5. 5

Gently fluff and mix the layers, garnish with fresh coriander, and serve hot with raita and bagara baingan.

Tips while you cook

Cook the basmati rice until it is about 70% done before layering.
Seal the pot with a cloth for dum cooking
Wrap the lid with a clean kitchen cloth before covering to trap steam.
Add saffron milk for color and aroma
Drizzle the saffron‑infused milk over the chicken before layering the rice.
