Instructions
- 1Mix the chicken with yogurt, ginger-garlic paste, lemon or pickle juice, cumin powder, coriander powder, chilli flakes, Shan Sindhi Biryani Masala and a little less salt. Add tomato paste if you want extra richness and tanginess. Marinate for 30 minutes if you have time.
- 2Fry sliced onions until golden. Take half out for garnishing and leave the rest in the pan. Add the chicken, tomatoes and green chillies and cook until the chicken is done and the oil separates.
- 3Remove some of the flavored oil and keep it aside. Take out the chicken and gravy.
- 4In the same pot, layer some chicken gravy and oil, followed by 90% cooked rice, fried onions, coriander and green chillies. Add the chicken and gravy, then repeat the layers.
- 5Finish with fried onions, coriander, green chillies, reserved oil, ghee and kewra water. Food color and lemon slices are optional.
- 6Cover tightly with foil and the lid. Place the pot over a heated tawa and slow-cook on low heat for 15 minutes.
