Method
Chicken Cacciatore – Heat 2 tbsp olive oil in a large skillet over medium heat, add the diced carrots, chopped onion, and chopped celery, and sauté until lightly browned, about 4–5 minutes.
Add the bite‑size chicken pieces, season with salt and pepper, and brown the chicken on all sides, about 5 minutes.
Stir in the crushed tomato and a splash of vinegar, reduce the heat to low, and simmer for 8–9 minutes until the chicken is cooked through; finish with any fresh herbs you like.
Fish Tacos – Toss the snapper pieces with smoked paprika, chili powder, garlic powder, Mexican oregano, a pinch of salt, and 1 tbsp olive oil until evenly coated.
Cook the seasoned fish in a hot skillet for 2–3 minutes per side, just until opaque.
Meanwhile, blend the halved cherry tomatoes, minced jalapeño, half a diced white onion, lime juice, a pinch of salt, and a drizzle of oil into a chunky salsa; gently fold in the diced avocado.
Warm the tortillas, place the cooked fish inside, top with the salsa and optional cilantro, and serve immediately.
Beef Burger – Form the ground beef into four equal patties, season with salt and pepper, and grill or pan‑fry over medium‑high heat to your desired doneness (about 4 minutes per side for medium).
Toast the whole‑grain buns, then assemble each burger with a patty, a lettuce leaf, and a tomato slice; add any additional toppings you prefer.
