Method

  1. 1

Preheat a large skillet or oven‑safe pan to 400°F (392°F).

  2. 2

Season the chicken pieces with salt and pepper, then sear them in the hot pan until browned on all sides, about 5‑7 minutes.

  3. 3

Add the sliced shallots, minced garlic, and chili flakes to the pan and cook, stirring, until fragrant, about 1‑2 minutes.

  4. 4

Pour in a splash of white vermouth, stirring to deglaze, and let it reduce slightly, about 2 minutes.

  5. 5

Add the broccoli florets, arranging some pieces so they remain exposed for crisping, and cook until they begin to soften and develop a slight char, about 5‑7 minutes.

  6. 6

Sprinkle the shredded cheddar cheese over the top, cover the pan, and let the cheese melt, about 3 minutes, then serve.

Tips while you cook

Sear chicken first
Season and brown the chicken pieces before adding any vegetables.
Deglaze with vermouth
Add the white vermouth after the aromatics and let it reduce to lift browned bits.
Leave some broccoli exposed
Arrange portions of broccoli.
Cover to melt cheese
After sprinkling cheddar, cover the pan and let the cheese melt for a few minutes.
