Ingredients

  • 4 fillets cod
  • 3 cloves garlic
  • 2 tbsp butter
  • 1 tsp chili flakes
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp soy sauce
  • to taste salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper to prevent sticking.
  3. Season the cod strips with salt and black pepper to taste.
  4. In a small saucepan, melt the butter over medium heat, stirring occasionally.
  5. Add the minced garlic to the melted butter and cook for 1-2 minutes, until fragrant.
  6. Add the chili flakes to the garlic butter and cook for another minute, stirring constantly.
  7. Stir in the lime juice, honey, and soy sauce to create the sweet chili lime sauce.
  8. Bring the sauce to a simmer and cook for 2-3 minutes, until slightly thickened, stirring occasionally.
  9. Place the cod strips on the prepared baking sheet in a single layer.
  10. Brush the garlic butter sauce evenly over the cod strips, making sure they are fully coated.
  11. Bake the cod strips in the preheated oven for 12-15 minutes, until cooked through and flaky.
  12. Remove the cod from the oven and serve hot with additional sweet chili lime sauce if desired.
