Method

  1. 1

Combine the maple syrup, blueberries, and quartered strawberries in a non‑stick pan.

  2. 2

Bring the mixture to a rapid boil over high heat.

  3. 3

Reduce the heat to low and let it simmer, stirring occasionally, until the liquid reduces to about half of the original volume, approximately 10 minutes.

  4. 4

If a thicker consistency is desired, continue cooking a few minutes longer, watching for the sauce to coat the back of a spoon without dripping.

  5. 5

Taste the compote; if it needs more sweetness, stir in up to 0.25 cup of granulated sugar, being careful not to over‑sweeten.

  6. 6

Remove from heat and let cool slightly before serving over pancakes, waffles, or French toast.

Tips while you cook

Combine before heating
Place the maple syrup, blueberries, and quartered strawberries together in the pan before bringing to a boil.
Simmer on low heat
After the rapid boil, lower the heat and simmer, stirring occasionally, for roughly 10 minutes until the liquid halves.
Check for thickness
If a thicker sauce is wanted, continue cooking a few minutes longer until it coats the back of a spoon without dripping.
Add optional sugar after tasting
Taste the compote and stir in up to 0.25 cup granulated sugar if more sweetness is needed.
