Method

  1. 1

Combine the white flour and wholemeal flour in a food processor.

  2. 2

Add the egg, almonds, Medjool dates, water, a pinch of salt and pepper, and blend until a smooth dough forms.

  3. 3

Divide the dough into four equal portions, shape each into a ball, flatten to about 1.5 cm thickness, and pinch a hole in the center of each to form a donut shape.

  4. 4

Place a pan of boiling water on the stove and poach the donuts for about 5 minutes, then remove and drain.

  5. 5

Heat a shallow layer of extra virgin olive oil in a pan over medium heat and fry the donuts for about 1–2 minutes per side until golden and cooked through.

  6. 6

In a separate pan, gently heat the blueberries with a teaspoon of honey until they soften and release a jam‑like sauce.

  7. 7

Toss the fried donuts in the warm blueberry sauce until coated.

  8. 8

Top each donut with a drizzle of Greek yogurt and a pinch of cinnamon.

  9. 9

Serve immediately as a nutritious, superfood‑packed breakfast.

Tips while you cook

Drain before frying
After poaching, let the donuts sit in a colander to drain before moving to the pan.
Use medium heat for the oil
Heat a shallow layer of olive oil over medium heat to fry the donuts evenly.
Heat blueberry sauce just until jam‑like
Gently warm the blueberries with honey only until they form a jam‑like consistency.
Serve right away
Serve the coated donuts immediately for the best texture and flavor.
