Method

  1. 1

In a large mixing bowl, combine bread flour, sourdough starter, water, milk, butter, sugar, and salt; mix until a smooth, elastic dough forms.

  2. 2

Cover the bowl and let the dough ferment and rise according to your sourdough schedule (typically 3–4 hours at room temperature or overnight in the refrigerator).

  3. 3

Preheat the oven to 375°F (375°F).

  4. 4

Divide the risen dough into eight equal pieces and shape each piece into a small hot‑dog‑shaped bun, using a sausage cut‑off as a guide for the “feet” and pressing a pinch of allspice or cloves into the dough to form the eyes and noses.

  5. 5

Brush the shaped buns lightly with the beaten egg wash.

  6. 6

Bake the buns on a parchment‑lined baking sheet for 20–25 minutes, or until they are golden brown.

  7. 7

Immediately after removing from the oven, brush the hot buns with melted butter for extra shine and flavor.

  8. 8

Allow the buns to cool briefly before serving.
