Method

  1. 1

Season the chicken wings with chicken bouillon powder, white pepper, garlic powder, and grated ginger.

  2. 2

Heat vegetable oil in a deep pan or fryer to about 350°F (350°F) and fry the wings until lightly golden, about 4–5 minutes per side.

  3. 3

Remove the wings and let them rest on a wire rack while you prepare the sauce.

  4. 4

In a saucepan, combine the chinsu hot sauce with a splash of water or broth, then heat gently, stirring, until the glaze thickens slightly, about 2–3 minutes.

  5. 5

Return the partially fried wings to the hot oil and fry a second time until crisp and deep golden brown, about 2–3 minutes.

  6. 6

Transfer the double‑fried wings to a large bowl and toss them generously with the hot‑sauce glaze to coat evenly.

  7. 7

Serve immediately while hot and crispy.

Tips while you cook

Rest after first fry
Let the wings rest on a wire rack after the initial fry before the second fry.
Keep sauce warm
Prepare the glaze while the wings are resting.
First‑fry timing
Fry the wings for about 4–5 minutes per side until lightly golden before resting.
