15 minutes to prep, 30 to cook. Indulge in a super‑easy, low‑carb chocolate peanut butter fudge that’s rich, creamy, and perfectly sweetened with stevia. Method

  1. 1

Combine the whipping cream, stevia, vanilla extract, and sea salt in a small pot.

  2. 2

Simmer on medium‑low heat for about 5 minutes, or until small bubbles rise to the surface.

  3. 3

Stir in the dark chocolate until fully melted and smooth, then pour the mixture into an ice‑cube tray to form the bottom layer.

  4. 4

Freeze the bottom layer for 10‑20 minutes until firm.

  5. 5

Microwave the peanut butter for 1.5 minutes (or until melted), then stir in a pinch of sea salt and two drops of stevia.

  6. 6

Remove the tray from the freezer and spread the peanut butter layer over the chilled chocolate base.

  7. 7

Return the tray to the freezer for another 20 minutes, or until the peanut butter layer is firm.

  8. 8

Melt the remaining chocolate and pour it over the set peanut butter layer as the final top layer.

  9. 9

Sprinkle with unsweetened coconut flakes, if desired.

  10. 10

Refrigerate for 1‑2 hours until completely firm, then pop the squares out of the tray and enjoy.
