Chicken Cobbler

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast
  • 2 cups all-purpose flour
  • 1/2 cup butter
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen mixed vegetables

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, sauté the chicken until cooked through, about 5-7 minutes.
  3. In a separate bowl, whisk together the flour, salt, and pepper.
  4. Add the butter to the flour mixture and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs.
  5. In a separate bowl, whisk together the milk and eggs.
  6. Add the frozen mixed vegetables to the milk mixture and stir to combine.
  7. Transfer the cooked chicken to a 9x13 inch baking dish.
  8. Pour the milk and vegetable mixture over the chicken.
  9. Top the chicken mixture with the flour and butter mixture, spreading it evenly to cover the top.
  10. Bake the cobbler in the preheated oven for 25-30 minutes, or until the top is golden brown and the cobbler is set.
  11. Remove the cobbler from the oven and let it cool for a few minutes before serving.
  12. Serve the cobbler hot, garnished with chopped fresh herbs if desired.
