Chicken Cobbler

Ingredients
- 1 1/2 pounds boneless, skinless chicken breast
- 2 cups all-purpose flour
- 1/2 cup butter
- 1 cup milk
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen mixed vegetables
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, sauté the chicken until cooked through, about 5-7 minutes.
- In a separate bowl, whisk together the flour, salt, and pepper.
- Add the butter to the flour mixture and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the milk and eggs.
- Add the frozen mixed vegetables to the milk mixture and stir to combine.
- Transfer the cooked chicken to a 9x13 inch baking dish.
- Pour the milk and vegetable mixture over the chicken.
- Top the chicken mixture with the flour and butter mixture, spreading it evenly to cover the top.
- Bake the cobbler in the preheated oven for 25-30 minutes, or until the top is golden brown and the cobbler is set.
- Remove the cobbler from the oven and let it cool for a few minutes before serving.
- Serve the cobbler hot, garnished with chopped fresh herbs if desired.
