Method

  1. 1

Place the chicken thighs, chicken breast, white onion, garlic cloves, fresh coriander, salt, black pepper, chili powder, sumac, and olive oil into a food processor and blend until the mixture is well combined and forms a coarse paste.

  2. 2

Transfer the mixture to a cutting board and shape it into long, rectangular kebab sticks, using a butter knife or your hands to separate individual portions.

  3. 3

Line a sheet of greaseproof paper and place each kebab stick on the paper, then arrange the kebabs in a single layer in the air‑fryer basket.

  4. 4

Preheat the air fryer to 350°F (if your model requires preheating). Air‑fry the kebabs for 12 minutes, turning them halfway through, until they are golden brown and cooked through (internal temperature should reach 167°F).

  5. 5

Remove the kebabs from the air fryer, let them rest for 2 minutes, and serve hot.

Tips while you cook

Blend thoroughly
Process all ingredients until a coarse paste forms before shaping.
Turn halfway
Flip the kebabs halfway through the 12‑minute air‑fry.
Rest briefly
Allow the kebabs to rest for 2 minutes after air‑frying before serving.
