Method
Dry roast cumin seeds, coriander seeds, black peppercorns, fennel seeds, and dry red chilies for 1–2 minutes, then grind them to a fine powder to make bhaja moshla spice mix.
Heat mustard oil in a pan over medium heat and fry the boiled potatoes until golden and crisp.
Add bay leaf and whole garam masala to the oil, stir briefly, then incorporate ginger green chilies paste, turmeric powder, red chilli powder, and Kashmiri chilli powder; cook for 1 minute to release aromas.
Stir in 2 tbsp of the prepared bhaja moshla spice mix and the tomato‑white sesame seed paste; simmer for 10 minutes, allowing the flavors to meld.
Add the fried potatoes back to the pan, then pour in water, season with salt and sugar; cook for another 10 minutes until the potatoes are fully coated and the gravy thickens.
Finally, fold in optional green peas and an additional 1 tbsp of bhaja moshla spice mix; cook for 2 minutes, then serve hot.
