15 minutes to prep, 20 to cook. A hearty, creamy soup that blends the savory richness of Italian sausage with the bright freshness of kale and fire‑roasted tomatoes. Coconut milk adds a silky texture without heaviness, making it a comforting dinner that feels both soup and salad.

Method

  1. 1

In a large pot over medium heat, add olive oil and ground Italian sausage and cook for 5–7 minutes until browned.

  2. 2

Add the diced onion, red bell pepper, green bell pepper, minced garlic, salt, and black pepper; cook for 3–5 minutes until the vegetables are fork‑tender.

  3. 3

Stir in the lemon juice, fire roasted tomatoes, coconut milk, chicken broth, and pasta. Bring to a boil, then reduce heat and simmer for 10 minutes.

  4. 4

When the pasta is cooked through, add the chopped kale and cook for another 3 minutes, covering the pot if possible to help the kale wilt.

  5. 5

Serve the soup topped with grated Parmesan cheese and a pinch of red pepper flakes.
