Beef
Season ground beef with garlic powder, smoked paprika, yellow mustard, salt, black pepper and Worcestershire sauce; cook in a skillet until browned, then melt American cheese or cheddar on top.
Caramelized Onions
Slice yellow onions and cook in butter over low heat, adding a pinch of salt and a splash of water as needed, until deep golden and sweet.
Burger Sauce
Mix mayonnaise (or sour cream) with ketchup, chopped caramelized onions, pickles or pickle relish, yellow mustard, white vinegar and garlic powder until smooth.
For the Bowls
Arrange a base of romaine or iceberg lettuce, add diced tomatoes and spicy pickled green chilies, then top with the crispy potatoes, seasoned beef, extra caramelized onions and a generous drizzle of burger sauce.
