Method

  1. 1

Season the tomahawk steak heavily with salt and black pepper on all sides.

  2. 2

Place the seasoned steak onto a baking sheet and slide it into a preheated oven.

  3. 3

Place the steak in a preheated oven at 250°F (250°F) and roast for about 30 minutes, aiming for an internal temperature of 118‑120°F (48‑120°F).

  4. 4

While the steak is in the oven, roast whole garlic cloves in the same oven until soft and caramelized.

  5. 5

Prepare the compound butter by mixing the softened butter with the roasted garlic, chopped rosemary, a pinch of saffron threads, hot chili flakes, and additional salt and pepper to taste.

  6. 6

After the steak has reached the target temperature, remove it from the oven and let it rest briefly.

  7. 7

Heat a heavy skillet over high heat and sear the steak on each side for 1‑2 minutes until a deep brown crust forms.

  8. 8

Slice the steak, top with generous dollops of the garlic‑rosemary‑saffron compound butter, and serve immediately.

Tips while you cook

Rest Before Searing
Allow the steak to rest briefly after removing it from the oven before searing.
Roast Garlic Simultaneously
Roast the whole garlic cloves in the same oven while the steak is cooking to save time.
High‑Heat Skillet Timing
Sear each side of the steak for 1‑2 minutes in a hot heavy skillet to develop a deep brown crust.
