Lazy Wonton Soup (Deconstructed)

Recipe by Rose Ruiz on InstagramAdded 2 November 2026.

15 minutes to prep, 20 to cook. A quick, comforting take on classic wonton soup that skips the folding of tiny dumplings. Tender ground chicken, aromatic ginger, and miso‑infused broth create a savory base, while mushrooms, bok choy, and optional chilli oil add texture and heat. Perfect for a fast, healthy dinner for one or two.

Method

Mince

  1. 1

In a bowl, combine ground chicken, sliced scallions, minced garlic, grated ginger, white pepper, and breadcrumbs; mix well.

  2. 2

Cook the mixture in a hot pan over medium‑high heat, stirring occasionally, until the chicken is browned and cooked through; set aside.

Soup

  1. 3

Heat sesame oil in a pot over medium heat, add the minced garlic and grated ginger, and sauté briefly until fragrant.

  2. 4

Stir in miso paste, sliced scallions, and soy sauce (if using), then pour in the chicken stock and bring to a gentle boil.

  3. 5

Add the half packet of wonton wrappers and cook for a few minutes until softened.

Serve

  1. 6

Divide the cooked mince into bowls, ladle the hot soup over it, and garnish with shiitake mushrooms, chopped baby bok choy, extra sliced scallions, and a drizzle of chilli oil if desired.

Tips while you cook

Set aside cooked mince
After browning the chicken mixture, transfer it to a bowl and keep it aside before preparing the soup.
Soften wrappers briefly
Add the wonton wrappers to the broth and cook only a few minutes until they soften.
Add fresh scallion garnish at the end
Slice extra scallions and sprinkle them on the finished bowls for a fresh bite.
