Method

  1. 1

Heat olive oil in a pan over medium‑high heat.

  2. 2

Add the chopped onion and sauté until softened, about 3–4 minutes.

  3. 3

Stir in the minced garlic, ginger, chili garlic sauce, turmeric, and a pinch of salt; cook for 1 minute until fragrant.

  4. 4

Add the quinoa, coconut milk, and water; bring to a boil.

  5. 5

Reduce heat to low, add the minced lemongrass, cover the pan, and simmer for 15 minutes until most of the liquid is absorbed.

  6. 6

Remove the pan from heat and let the quinoa sit, covered, for 5–10 minutes.

  7. 7

While the quinoa rests, combine the chopped cucumber, chopped Roma tomato, half of the chopped cilantro, rice vinegar, salt, and black pepper in a bowl; toss gently to make a fresh salad.

  8. 8

Fluff the cooked quinoa with a fork and fold in the remaining chopped cilantro.

  9. 9

Serve the creamy Thai quinoa topped with the fresh veggie salad.

Tips while you cook

Rest Covered
After simmering, keep the pan covered and let the quinoa sit for 5–10 minutes.
Add Cilantro Last
Fold in the remaining chopped cilantro after fluffing the quinoa to preserve its fresh color.
Sauté Onion Properly
Sauté the chopped onion over medium‑high heat until softened before adding aromatics.
Fluff with a Fork
Use a fork to fluff the cooked quinoa, keeping the grains separate.
