Method
Preheat oven to 425°F.
Toss tofu with salt, garlic powder, cornflour and sesame seeds on a lined oven tray, then drizzle sesame oil over the tofu and spread it to one side of the tray.
Place the mixed slaw on the other side of the tray, toss with soy sauce and a drizzle of sesame oil.
Cook on the upper oven rack for about 20 minutes, tossing halfway through, until the tofu is golden and the slaw is well cooked.
Bring a pot of salted water to a boil, cook the soba noodles according to the packet instructions, adding the edamame beans one minute before draining.
When the tofu has been cooking for 20 minutes, drizzle the teriyaki sauce over it, toss to coat, and return to the oven for an additional 5 minutes.
Combine the cooked noodles with the roasted slaw, toss to mix, and season with a splash of soy sauce.
Serve the noodles topped with the glazed tofu, extra sesame seeds, and crispy shallots, adding Japanese or plant‑based mayo on the side if desired.
